Té Company’s Golden Lily is a Taiwanese oolong made from Jinxuan, the cultivar also called TTES No.12 or milk oolong. Grown in the hills of Ali Shan, its leaves make a creamy, floral cup with tasting notes of butter, pistachio and orchid. These are flavour impressions of the tea, rather than added dairy ingredients. For the house’s brewing guide, use 6 g in 237 ml of water at 100°C and infuse for two minutes. The 1 oz pouch offers a small introduction to this rounded oolong alongside the brand’s roasted-buckwheat Soba.

Té Company Soba uses puffed Taiwanese Tartary buckwheat, Fagopyrum tataricum, from Tainan. Its nutty, earthy infusion evokes toasted rice milk, with a lingering sweet note compared by the house to freeze-dried corn. That comparison describes taste rather than an added corn ingredient. The selected pouch contains 1 oz. Use 6 g for 237 ml of water at 91°C and brew for one minute. It can be served hot, at room temperature or over ice, giving the same grain a range of drinking occasions.
